Pumpkin Loaf

Ingredients

  • 500 g Hokkaido pumpkin

  • 25 g fresh yeast

  • 1 ts salt

  • 100 g sugar

  • 70 g Arhuaco Businchari 82% Dark chocolate

  • 125 g butter

  • 750 g flour

Preparation

the pumpkin

  1. Cut the pumpkin into dices and remove the seeds.

  2. Boil the pumpkin in hot water for approx. 15 minutes until all dices are squishy.

  3. Remove the water and blend the pumpkin.

  1. Mix the pumpkin puree with the fresh yeast, the sugar, the salt and the melted butter.

  2. Let the yeast rise for 30 minutes.

  3. Chop the chocolate finely in the meantime.

  4. Add the flour, the juice of half a lemon and the chocolate to the pumpkin yeast mixture.

  5. Knead the dough thoroughly and let it rise another 30 minutes.

  6. Put the dough into a rectangular cake mold and bake it for 45 minutes on 180°C.

  7. Serve with butter and jam.
