Arhuaco-Granny Smith Tartelettes

Try these perfect chocolate and apple tarts! You’ll love the heights of sweet spice, liquorice and sesame of the Arhuaco 82% combined with the acidity of the Granny Smith apples!

Ingredients

  • 320 g Original Beans Arhuaco 82%

Preparation

For the shortcrust pastry

  1. Ingredients:
    125g butter
    75g sugar
    180g flour
    1 egg
    70g Original Beans Arhuaco 82%, melted

  2. Make a shortcrust pastry from the ingredients, leave to cool if necessary.

  3. Roll out the dough to approx. 2.5mm and lay out the tartelettes

Cream for the filling

  1. Ingredients:
    300ml cream
    300ml milk, 3.5%
    100g sugar
    30g cream powder
    60g egg yolk
    150g Original Beans Arhuaco 82%

  2. Mix cream powder and egg yolk with a little milk. Boil the remaining ingredients and thicken with the mixed cream powder. Remove the cream from the heat and stir in the chocolate.

  3. Pour the cream into the tartlets while they are still hot.

  4. Bake the tartlets at 180°C for about 20 minutes.

  5. Allow the tartlets to cool slightly and remove from the mold.

For the apple filling

  1. Ingredients:
    120g Granny Smith
    240g apple puree (e.g. from Boiron)
    30g sugar
    2g pectin

  2. Cut the apple with the peel into fine cubes of approx. 0.5 cm and stir into the puree. Mix the pectin with the sugar and stir into the apple puree mixture. Boil everything.

  3. Pour the apple filling into round silicone molds with a diameter of approx. 6 cm and freeze.

For the chocolate mousse

  1. Ingredients:
    50g sugar
    50g egg yolk, pasteurized
    100g Original Beans Arhuaco 82%, melted
    250g cream at least 33%, whipped

  2. Beat the sugar and pasteurized egg yolks until fluffy. Stir in warm, dissolved couverture. Quickly stir one third of the whipped cream into the couverture egg yolk mixture. Then carefully fold in the remaining cream.

Serving

  1. Remove the frozen apple filling out of the mold and place it in the middle of the baked, cooled tartlet. Using a piping bag, place dots of the mousse around the apple filling.
    Possibly shine the tartlet and decorate with flowers.
