Chocolate Cashew Cookies

These Chewy Chocolate Cashew Cookies are quick and easy to make and are filled with our White  Yuna 37% and Esmeraldas Dark 65% chocolates. Black Apron bakes these cookies and all their other treats traditionally, with ONLY honest ingredients and a modern twist.

Ingredients

  • 150 g Original Beans Yuna 37%

  • 150 g Esmeraldas Dark 65%

  • 200 g Cashew nuts (roasted, roughly chopped)

  • 200 g Flour

  • 125 kg Butter

  • 60 g Cane sugar

  • 60 g Muscovado sugar

  • 60 g Eggs

  • 10 g Starch

  • 3 g Baking soda

  • 3 g Baking powder

  • 3 g Salt

  • 2 g Vanilla ground

  • 2 g Cardamom ground

Preparation

Cookie Dough

  1. In a large bowl or food processor, combine butter, cane sugar, and muscovado sugar and mix on low-medium speed until smooth.

  2. Add a large egg.

  3. Weigh all of the dry ingredients, except the cashews and chocolate, and sift them into the butter-sugar mixture.

  4. Mix the cookie dough on low speed for 2-3 minutes.

  5. Add the cashew nuts and chocolate and mix them in very briefly and carefully.

  6. Place the cookie dough in the fridge overnight (at least 12 hours!).

Next day

  1. Preheat the oven to 200 C (the temperature may vary depending on the oven).

  2. Place parchment paper on the baking sheet.

  3. Weigh the cookies to the desired size (we recommend 100g), roll them into balls and place them on the prepared baking sheet. Don't flatten the cookies!

  4. Bake the cookies for about 12 minutes (depending on the oven).
