Festive Chocolate Cookies

Ingredients

  • 240 g wheat flour

  • 130 g brown muscovado sugar

  • 120 g warm butter

  • 1 unit egg

  • 1 p sea salt

  • 30 g Original Beans Cusco Chuncho 100%

  • 50 g Original Beans Femmes de Virunga 55%

Preparation

  1. Grate the Cusco Chuncho with a simple grater.

  2. Sieve the flour and sugar into a bowl. Add butter, eggs and a pinch of salt and knead into a dough. Add the Cusco Chuncho and continue kneading.

  3. Put the dough in a plastic bag and flatten to approximately 3 cm. Leave in the fridge for 30 min.

  4. Preheat the oven to 175°C and prepare a baking tin with baking paper.

  5. Roll out half of the dough to 3-4 mm and cut out the cookies. Bake for 8-10 min. Do the same with the rest of the dough.

  6. Leave the biscuits to cool and melt the Femmes de Virunga chocolate in a waterbath. Sprinkle the chocolate over the cookies with a spoon or simply dip them into the couverture.
