Chocolate Popsicles Sprinkled with Almonds

Nothing beats a refreshing popsicle on a hot summer day. Of course, you can quickly stock up on store-bought frozen treats, but it’s more fun to make some yourself. If you’re looking for tasty popsicle recipe, be sure to give these creamy chocolate pops a try.

Ingredients

  • 30 g Original Beans Udzungwa Nibs

  • 70 g Original Beans Virunga 70%

Preparation

Chocolate Fudge

  1. INGREDIENTS:
    1 frozen bananas
    1 can coconut milk , lite or full-fat for even creamier taste
    2 tbsp cacao powder
    30g Udzungwa nibs

  2. In a high speed blender, combine the frozen banana, coconut milk and cacao powder. Blend until smooth and creamy.

  3. Add the cacao nibs and blend briefly or stir to distribute them throughout.

  4. Pour the chocolate fudge mixture into Popsicle molds or favorite freezable containers and freeze overnight.

Chocolate Coating

  1. INGREDIENTS:
    70g Virunga 70%
    Chopped almonds
    Pinch of sea salt (optional)

  2. The following day, melt the chocolate. Allow the melted chocolate cool for 5-10 minutes.

  3. Line a baking sheet with parchment paper. Remove the popsicle from the freezer.

  4. Working quickly, dip, cover or drizzle the pops with the melted chocolate and place them flat back down on the parchment paper.

  5. Sprinkle it with chopped almonds and a pinch of sea salt.

  6. Once they are all done, place the baking tray with the popsicle back in the freezer for about 10 minutes or until the chocolate hardens.

  7. Remove tray from the freezer, store the popsicles in an airtight container, using parchment paper in between if needed, and freeze to set. Enjoy!
