Magical Mirror Glaze

This glaze will cover a a 18 cm round cake.

Ingredients

  • 10 g Agar Agar powder

  • 125 ml Water

  • 225 g Sugar

  • 125 g Femmes de Virunga 55% chocolate

  • 30 g cocoa powder

  • 65 ml double cream, room temperature

Preparation

  1. Bloom agar powder in some water ( measure by eye) and set aside.

  2. In a sauce pan set over medium heat, add sugar, and 125 ml of water. Cook syrup until temperature reaches 104 °C.

  3. Remove from heat and add chocolate. Stir to melt. Now, add cocoa powder and whisk to combine.

  4. Add double cream and stir. Finally, add the bloomed agar agar and stir. Temperature must reach 60 degrees C.

  5. Sift glaze through a sieve and blend using an immersion blender to remove lumps. Let cool at room temperature until it reaches about 29 degrees C. Use right away.

  6. You can flavour this glaze in any way you like, but trust me, it is already super yummy as it is!
