Ganache with Original Beans Cusco 100% Pure Cacao

Ingredients

  • 925 ml water
  • 500 ml passion fruit puree
  • 200 g glucose
  • 750 g cane sugar
  • 1 kg Original Beans Cusco 100% Pure Cacao
  • Vinegar to taste

Preparation

1.

Place the Original Beans Cusco 100% couvertures into a bowl.

2.

Bring the water, passion fruit puree, sugar, and glucose to a boil in a saucepan.

3.

Now pour the liquid over the chocolate couvertures, let it sit for a moment, and blend with a hand blender until smooth.

4.

Season with a dash of good-quality vinegar.

5.

Transfer the mixture while warm to piping bags and refrigerate overnight.

6.

Use the next day.
