1 g Fleur de Sel/Salt

125g organic Cacao powder
25g Salt
520g brown Sugar
520g liquid Butter

Sieve Caramel Hips

450g Fondant
300g glucose Sirup

A bit of organic cacao powder

Greengage Sorbet

1000g of puree Purée
200ml Water
100g Sugar
100g Glucose powder
110ml Lemon juice
20ml Plum Brandy
